Best Vegan Salted Caramel Brownies

These no bake salted caramel brownies make an excellent snack!

Do you ever crave something chocolate with gooey caramel? It happens to me often enough, I might as well remove all the okay brownies from my recipe file and put this one front and center. I know when I need to whip up a batch when visions of turtle candies, milk duds and my grandma’s chocolate cake with caramel icing start to preoccupy my mind. Originally shared by , these creamy chocolatey no-bake brownies satisfy without, gluten, dairy or sugar. Be sure and use the softest, gooey-ist dates you can find (pitted, preferably, to save time). The brownie part will tend toward crumbly if the dates are too dry. (But that won’t stop you from enjoying them anyway, trust me.)

It’s dangerously simple:

Combine the following ingredients in a food processor, whirl until a brownie consistency happens, then press into a parchment paper lined loaf pan:

  • 1 1/2 c. pitted medjool dates
  • 1/2 c. hazelnuts
  • 1/2 c. walnuts
  • 1/4 c. cocoa powder

Stir the following ingredients until smooth and spread over brownies layer:

  • 1/2 c. almond butter
  • 1/4 c. maple syrup
  • 1 Tbsp almond milk
  • 1 Tbsp coconut oil (I usually melt it a bit)

Place in freezer to firm, cut into squares and sprinkle with sea salt. Store in a the freezer in an easy to grab location for instantaneous satisfaction of chocolatey gooey cravings.
