Happiness In a Bowl

When my kids were little, they loved manmade food staples like chicken nuggets, “Kraft Dinner,” and french fries. They often heard me say, “Eat something God made.” This week, after experimenting with some yummy bar recipes full of good things like maple syrup, oat flour, natural peanut butter and chocolate, I started craving God-made food. These two lunches are an assembly of vegetables and proteins that spend less time in a processing system. One I puréed into a soup. They satisfied my need for something festive and filling, and as a bonus, low calorie. Hope you enjoy these keepers and have fun making your own happiness-in-a-bowl concoctions!

Gleefully Green Soup

  • 1 C. steamed broccoli
  • 1 C. steamed carrots
  • 1/4 canned chickpeas
  • 1 Tbsp. coconut milk
  • 1 tsp. green curry paste
  • 1/2 tsp. Tamari (or soy sauce)
  • 1 tsp. organic veggie bouillon powder dissolved in cup of hot water

Blend in a Vitamix or hand-held blender and enjoy. Since it’s summer, I let my soup come to room temperature. Optional garnish: fat free Greek yogurt and Everything But The Bagel seasoning. Calories: 206

Seared Tuna Forbidden Fun Bowl

  • 4 oz. seared Ahi tuna
  • 1 C. diced butternut squashed, roasted with 1/2 tsp. olive oil
  • 1 C. spinach sautéed with shallots and avocado spray oil (1/4 tsp.)
  • Bell pepper and onion slices, stir-fried
  • 1/3 C. forbidden black rice

Arrange in a bowl and enjoy! Calories: 315
