Healthy Chocolate Chip Sweet Potato Muffins

These healthy, filling muffins are so chocolatey, moist and delicious, you will never guess they are 171 calories each. Keep them on hand for busy weeks when you need quick but satisfying meal options. You know, like the week before Christmas?

Hide these sweet potato almond butter muffins in the back of the fridge to deter unworthy snackers!

Healthy Almond Butter Sweet Potato Muffins*

•1 cup mashed sweet potato
•3/4 cup plain Greek yogurt (I use fat free — Riviera brand is my favorite)
•2 eggs
•1/2 cup milk (I used unsweetened vanilla almond milk)
•1/3 cup almond butter
•1 tsp vanilla
•1/2 cup coconut sugar (can substitute brown sugar)
•1 1/2 cups oat flour
•pinch sea salt
•1 tsp cinnamon
•1 tsp baking soda
•1/2 tsp baking powder
•1/3 cup mini chocolate chips (save a few to sprinkle over top)
Mix wet and dry ingredients (except chocolate chips) separately. Then fold together until well combined. Mix in chocolate chips, scattering a few on top of each muffin before they go in the oven, then bake in a muffin tin at 350 F. for 15-20 mins.
